My brother and I headed out for the weekend and headed over to Eastern WA. The Colockum Pass Road is becoming a favorite of mine since it's relatively close to home and since it's on the east of the Cascades, it's dryer and warmer than Seattle.

The dinner was definitely Iron Chef worthy. I've made a few duds out on the trail, but this meal was memorable. I made a grilled pork chop with sauteed shitakes, napa cabbage and green onions in a tonkotsu broth. As you know, I love pork and this didn't disappoint.

The weather during the day was cloudy and overcast but fortunately by sunset there were clusters of clouds along with clear sky and it made for some crazy looking clouds. A few minutes later, Mt. Rainier popped out for a few minutes right before the sun went down.

It definitely doesn't have the same kind of magic as Utah, but it's only 2 hours away.
